You had me at HELO
It took quite a while for me to get the configuration right; one simple setting was preventing Exchange Server from talking to the SharePoint Server's (WSS 3.0) SMTP Service.
It was easy to follow; however, Mr. Smith's paper only shows how to setup Sharepoint; the troubleshooting guide, found on the last page of the paper, points out that creating an Exchange SMTP-Out connector may be neccessary to deliver mail to my sharepoint SMTP. For me, the key to getting the Exchange's SMTP-Out connector to work, was the Send HELO instead of EHLO setting.
The solution: In the Exchange 2003 Manager, the SMTP-Out connector to the sharepoint's [sm.ar.th.ost] required I check the box for [x] Send HELO instead of EHLO.
Before doing that, mail would pass to the WSS SMTP and get sent back to exchange, ending up in the Queue labeled "Messages with unreachable destinations"; Illistrated below.
The next illistration sows the SMTP-Out connector's default settings, where the selection that makes sense, is to select the Outbound Security... button and select Anonymous access; However, it seems sharepoint doesn't recognize EHLO and rejects mail addressed to mail enabled folders; at least that was the case in my world.
The illistration below shows the default setings. For Exchange to relay mail to sharePoint, I had to select the opton to "Send HELO instead of EHLO".

I should mention that the HELO setting was not necessary when I configured an Exchange Server that was also a DC; however, my current Exchange Server is just a member server. Perhaps that difference is what caused the logical setting to be the wrong setting.
